Western countries, they cannot live without cheese every day. We are all familiar with popular cheeses like Parmigiano, Gruyere, Cheddar or Mozzarella… What about Pule?

For cheese enthusiasts and food enthusiasts from all over the world yearn for a taste of Pule cheese for its famous taste. Described as crumbly and soft, it is said to have a taste similar to the very famous Spanish cheese – Manchego, but with a darker and richer flavor.

Why is Pule cheese so expensive?

Conventional cheeses use cow, goat, sheep and buffalo milk. Rarer ones like yak cow’s milk. But perhaps the rarest is donkey milk, which is low yielding and difficult to produce. Donkey milk is a high-protein, low-fat food with a similar amount of lactose as breast milk.

A female donkey produces only about 1.5 to 2 liters of milk per day, but each milking, you only get about 0.2 liters of milk. In addition, there is no donkey milking machine, so workers have to hand milk 3 times a day. It is known that to make 1 kilogram of cheese requires about 25 liters of milk instead of 10 liters like cow’s milk. Therefore, it is estimated that to produce one pound of Pule it is necessary to milk about 90 donkeys.

A donkey can only milk 1.5-2 liters of milk per day.

The donkeys milking to make cheese is the Balka donkey breed, which is small in number and not all milk is produced. The donkey lives on a farm in the Zasavica Special Nature Reserve in Serbia and its owner, Slobodan Simić, is the only producer of Pule cheese in the world.

With a limited number of a few hundred donkeys on a single farm, the Balka donkeys cannot supply enough milk to produce cheese everywhere, no matter what the cost. After milking is completed, the milk is mixed with goat’s milk (the donkey-goat ratio is 60:40) and frozen, the next step is to be smoked. The result is a full-flavoured shredded white cheese. In the opinion of some people, this cheese has a rich, fatty, aromatic, very special taste.

Unique custard cheese.

Why mix with goat milk like that? Because according to the results of testing the nutritional composition of donkey milk, there is not enough casein (the basic component of animal milk protein) to make cheese, so a small amount of goat’s milk must be added to meet the ingredients protein without losing the characteristic taste of donkey milk. After researching the formula, it is 60% donkey milk + 40% goat milk.

The remarkable benefits of donkey milk have been appreciated for thousands of years. Legend has it that the Egyptian queen Cleopatra bathed in donkey milk to try to preserve her beauty. Containing only 1% fat and 60 times more Vitamin C than cow’s milk, donkey milk has a long history of being considered an important ingredient in health and beauty care. At the Zasavica reserve, donkey milk soap is also sold, for those who believe in its ability to restore skin.

Cheese is not too expensive for those who can afford it, but not every money can buy it.

In addition to the limited quantity, it is a fact that Pule cheese is not easy to buy. After all, the price of 30 million / kg or more is still the price that the rich can afford. But the problem is that this cheese of Serbian origin is not commercially produced and of course not for sale.

In 2013, athlete Novak Doković even bought the entire production of Pule cheese to supply and differentiate his restaurant. In short, Pul cheese is not on the shelves at the most upscale grocery stores or the most posh restaurants; pule is not available for sale and can only be purchased on the farm. And even if you have money, you can hardly buy a pule anytime you want. But if you have a lot of money it’s a different story.
