Persimmon is classified as a specialty fruit of Vietnam. From the North to the South, there are many places to grow persimmons, but the most famous are still three regions: Lang Son, Moc Chau, and Da Lat. The pink season is usually from August to October of the year. Only two months, so for this very popular fruit, it is too little. Moreover, ripe persimmons have a short storage time, if not picked immediately, they will be crushed or wormed.

That is the reason that dried persimmons were born, both to preserve and bring a different flavor to persimmons. Dried persimmons originate from the Japanese hanging persimmon method. The persimmons are carefully selected, then hung on a drying line or drying rack, left outdoors under the sun for three to four weeks, to have the famous dried persimmon dish.

Choosing persimmons for drying does not depend on the type of persimmon but on its ripeness. We can use all kinds of persimmons such as egg persimmons, square persimmons to make, but we should choose old, unripe persimmons that can be tough and attractive new finished products.

Preliminary stages are also very important. When peeling persimmons, peel them gently to avoid damaging the intestines. To make it easier to hang, you should peel it carefully to keep the rosette for tying the string. In addition, many people also knit a string around the persimmon to prevent the stem from falling off during the drying process. After preliminary processing is complete, before drying, you can also dip persimmons in alcohol to disinfect and avoid mold while drying.

Finally, just dry persimmons in a cool place, avoid dusty places for three to four weeks, and you will be “harvested” persimmons hanging from the wind. The persimmon after hanging in the wind, drying in the sun will turn dark orange red, the meat is dry but crispy, tough and very sweet.

Hanging persimmon or dried persimmon is a favorite dish of many people. The persimmon fruit is sweet, so it is very suitable to enjoy with tea. The average price of Da Lat dried persimmons ranges from 400 to 500,000 halves/liquid, depending on the place of sale.
