Tu Le com, a gift that causes nostalgia when collected from the Northwest

Com Tu Le is a specialty of the Northwest that is loved by many people. Because not every season has this gift. Only when the weather starts to get cold, from summer to autumn, do local people start the process of making nuggets. Some people think that the land of Tu Le seems to receive the favor of mother nature. The soil has many minerals, the cool climate plus the watering from the stream pouring from the top of Khau Pha … create such a special flavor for Tu Le nuggets.

Tu Le Com – A gift in a high place.

In the season of making nuggets, right from the early morning, indigenous people start to go to the fields to select the rice grains that are still in the fishing period. After that, you have to start making nuggets to keep the delicious taste and eye-catching green color. All the process of making the “green pearl” of the Northwest is done by hand, from threshing, watering to roasting nuggets.

When roasting rice, you must stir it evenly, to avoid burning the seeds.

When roasting is complete, the rice is left to cool. After about 10 pounding, the husk will separate, revealing light green nuggets. People will use a sieve to select the fine, smooth grains and then wrap them with dong leaves. Therefore, the taste and plasticity of Tu Le nuggets are kept completely.

Com has a light green color, typical of rice, best eaten when freshly made. The fragrant aroma on the tip of the tongue begins to spread throughout the oral cavity. In addition to eating directly, Tu Le nuggets are also often eaten with ripe bananas, red persimmons or used as ingredients for cooking sticky rice, tea and some other dishes such as fried rice cakes, fried shrimp, fried spring rolls…
